<p style="text-align: justify;">MEZZELUNE RIPIENE</p>
<p style="text-align: justify;">Ingredienti 1 tazza di farina, 1 tazza di acqua, 1 cucchiaio di burro, un pizzico di sale, 1 albume, pane grattugiato q.b., olio di arachide per friggere. Per il ripieno: 1 scamorza, 100g di pomodorini, 100g di spinaci, 200g di ricotta, 1 salsiccia, 150g di ragù, 1 mozzarella.</p>
<p style="text-align: justify;">Far bollire l&#8217;acqua con il burro e unire di colpo la farina, cuocere per pochi minuti finchè non si stacca dalla pentola. Lasciare raffreddare. Prendere un pezzetto alla volta e stendere sottile a forma di disco, aiutandosi con un piattino per farli tutti uguali. Riempirli con il ripieno scelto chiudere con la forchetta e passare nell&#8217;albume e nel pane grattugiato poi friggere in olio ben caldo.</p>

<p style="text-align: left;"><span style="text-align: justify;">ARROTOLATO DI POLLO E SPECK ALLE MELANZANE E AGLIO FRESCO</span></p>
<p style="text-align: justify;"><span style="text-align: justify;"> Ingredienti otto cosce di pollo disossate, 150g. di speck a fettine, sei-otto fette di melanzane grigliate, un trito di timo, due spicchi di aglio fresco, un bicchiere di vino bianco secco, olio<br />
extra vergine d&#8217;oliva, sale e pepe a piacere.</span></p>
<p style="text-align: justify;"><span style="text-align: justify;"> Battere leggermente le sottocosce di pollo e metterle su di un foglio di carta forno.  Spargervi sopra il timo tritato. Coprire con le fettine di speck e poi con quelle di melanzana. Arrotolare delicatamente e chiudere la carta forno e poi legare l&#8217;arrotolato piuttosto stretto. Salare e pepare. Mettere in forno già caldo a 200° per </span>circa un&#8217;ora e un quarto. Nel  frattempo in una padellina mettere l&#8217;aglio fresco e un rametto di timo. Unire il vino bianco e farlo ridurre di due terzi. Aggiungere l&#8217;olio ed eliminare l&#8217;aglio e il timo. Controllare la cottura della carne e aggiungere il fondo di cottura alla salsetta preparata. Riportarla all&#8217;ebollizione e correggere di sale e di pepe. Poi una volta che la carne si sarà intiepidita slegarla e affettarla. Servirla con il suo sugo e con verdure di stagione.</p>
