<p style="text-align: justify;">CANEDERLI DI RICOTTA</p>
<p style="text-align: justify;">Ingredienti per i canederli 200g di pane raffermo, 200g di ricotta vaccina, 100g di farina &#8220;00&#8221;, 2 tuorli, 100g di latte, 1 pizzico di sale, 100g di pancetta affumicata, 4 uova sode, 100g di valeriana, 2 cucchiai di aceto di mele, olio extravergine di oliva q.b.</p>
<p style="text-align: justify;">Per i canederli: tagliare il pane raffermo a cubetti e bagnarlo con il latte precedentemente intiepidito. Unire la ricotta, la farina, i tuorli e regolare di sale. Mescolare energicamente con le mani e formare delle polpette delle dimensioni di una piccola sfera (i canederli). Cuocerli in acqua bollente salata per 10&#8242;. A parte, rosolare la pancetta affumicata tagliata a julienne in una padella antiaderente con un filo d&#8217;olio extravergine di oliva. Sfumare con l&#8217;aceto di mele e lasciar evaporare. Unire la pancetta alla valeriana e mescolare delicatamente. Servire i canederli sopra l&#8217;insalata di valeriana con intorno delle fette di uova sode.</p>

<p style="text-align: left;"><span style="text-align: justify;">POLPETTINE ALLA MENTA</span></p>
<p style="text-align: justify;">Ingredienti 800g di carne agnello macinata, 1 ciuffo di menta fresca, 2 spicchi d&#8217;aglio, 1  rametto rosmarino, 2 cucchiai di senape, 2 cucchiai di miele, 200g di feta, pangrattato, olio extra vergine oliva, 250ml di brodo di manzo, 750ml di passata di pomodoro, origano fresco.</p>
<p style="text-align: justify;">Mescolare in una ciotola l&#8217;aglio, la carne, la menta, il rosmarino, la senape, il miele e la feta precedentemente sbriciolata. Formare delle polpettine. Scaldare un filo d&#8217;olio in una padella e cuocere le polpettine per circa 3 minuti, finché non risultano dorate. In un&#8217;altra padella mettere la passata di pomodoro e il brodo, lasciar restringere un pochino il sugo, unire le polpettine e finire di cuocere per altri 12 o 15 minuti. Aggiungere l&#8217;origano e cuocere per un altro minuto. Servire calde<span style="text-align: justify;">.</span></p>
